Advent pancakes

Ingredients for 2 servings:

  • 2 bananas, ripe
  • 4 eggs
  • 70 g dried apricots
  • 20 g walnuts, chopped or cashew nuts
  • e.g. vanilla powder
  • n. B. Cinnamon powder

Instructions

Working time approx. 10 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

gluten-free, healthy, vegetarian, suitable not only for Advent

Puree the bananas into a puree. Add the eggs and mix well. Pour hot water over the dried apricots and let stand for about 5 minutes. Finely chop the walnuts or cashews and add them to the banana and egg mixture. Drain the water from the apricots and cut the apricots into small pieces. Add the pieces to the banana mixture. Add ground vanilla and cinnamon to taste and mix all ingredients thoroughly. Grease a small frying pan with a little olive oil or use a nonstick pan. Use the mixture to make small, thin pancakes. The pancakes taste delicious with applesauce, quark, Nutella, etc. They keep well in a cool place until the next day.
