Ingredients for 1 servings:

  • 250 g butter or margarine
  • 250 g sugar
  • 500 g spelt flour, type 630 or wheat flour
  • 2 eggs
  • 100 g almond(s), ground
  • 100 g nuts, ground
  • 50 g candied orange peel, ground
  • 100 g candied lemon peel, ground
  • 30 g cocoa powder
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp. clove powder
  • 1 pinch of nutmeg
  • 200 g powdered sugar
  • 1 tbsp lemon juice
  • Water, warm

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Christmas cookies

Knead the dough ingredients together. Form the dough into 6 equal-sized rolls, long enough to fit across the baking sheet. Place 3 rolls on each baking sheet (lined with baking paper). Bake for 10-15 minutes at 180°C (fan oven). In the meantime, mix the icing ingredients. Immediately after baking, spread a thick layer of icing onto the rolls. While still warm, cut into 2 cm wide strips and allow to cool. You can vary the ingredients: nuts, almonds, candied lemon peel, and candied orange peel. I simply used the leftovers I had after baking cookies.
