Ingredients for 6 servings:

  • 1 kg chicken breast, diced
  • 2 medium-sized onions, diced
  • 1 large kohlrabi, diced
  • 1 large red bell pepper(s), diced
  • 2 medium-sized fennel, diced
  • 500 g dates and/or grapes, seedless, halved
  • 500 ml coconut milk
  • 500 ml sweet cream
  • n. B. Honey
  • n. B. Curry
  • pinch of cumin
  • some cornstarch to thicken

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 30 minutes

Chicken African style

Brown the chicken breast in a little oil. Add the onions and sauté until golden brown. Sauté the kohlrabi, bell pepper, and fennel cubes. Add the dates and/or grapes, deglaze with the cream and coconut milk, and bring to a boil. Season to taste with honey, curry, and cumin (tip: use very sparingly, otherwise the sweet flavors of the coconut and dates/grapes will be overpowered). Cover and simmer for 30 minutes, then thicken with cornstarch. Serve with rice or couscous.
