a recipe from Nigeria

Nigerian cuisine has its own recipe dedicated to one spice: pepper. But be careful: not everyone likes pepper soup! Wash the chicken, cut it into pieces, and place it in a pot with the water, the sliced chilies, the chopped onion, and the crushed garlic. Boil for 30 minutes. Crush the peppercorns in a mortar. Then add the pepper and chopped mint to the pot and boil for another 30 minutes. Finally, add the chopped crab, if using, and boil for another 10 minutes. Season to taste and serve hot. For a vegetarian version, vegetables such as tomatoes and/or cabbage can be used instead of the chicken.
