Ingredients for 6 servings:

  • 1 kg anchovies, boned
  • 150 g flour
  • 200 ml vinegar
  • 1 clove(s) garlic
  • 25 g sugar
  • 1 bay leaf
  • salt and pepper
  • Oil for frying

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Sweet and sour anchovies, a Sicilian specialty

Season the fish with salt and pepper, coat in flour, and deep-fry in hot oil. In a small pan with a little oil, toast the garlic and bay leaf, add the vinegar and sugar, and cook for 1 or 2 minutes. Turn off the heat and pour over the fried fish. Let it cool, then refrigerate and let it marinate for a few days. It’s best to prepare this recipe a few days in advance. Serve garnished with fresh mint leaves.
