Ingredients for 4 servings:

  • 500 g flour (wheat flour)
  • 4 eggs
  • 1 tsp salt
  • some water, cold
  • 200 g cheese (Emmental), grated
  • 100 g cheese (mountain cheese), grated
  • 100 g butter
  • 1 onion(s)
  • pepper
  • Salt

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

In a bowl, whisk together flour, eggs, water, and salt until the batter bubbles. Grate the batter into boiling water. Bring the resulting spaetzle to a boil briefly and then skim off the excess liquid with a slotted spoon. Add layers of spaetzle, grated cheese, salt, and pepper to taste to a preheated baking dish. Don’t mix the layers. Place the dish in a preheated oven (250°C) with top heat for about 15 minutes, until the cheese (top layer) is golden brown. Before serving, sprinkle the golden-brown onions and butter over the pasta. Serve with a green salad.
