Almond cookies

Ingredients for 1 servings:

  • 800 g ground almonds
  • 250 g chocolate (block), milk or dark chocolate
  • 500 g sugar
  • 4 eggs
  • 2 tsp cinnamon

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Grate the chocolate block. Place 600g of almonds, chocolate block, sugar, eggs, and cinnamon in a bowl and mix with a dough hook until a moist, sticky dough forms. Now cover the work surface with ground almonds (instead of flour) and roll out the dough (approx. 5mm thick; cookies don’t rise much). If the dough sticks to the rolling pin, sprinkle it with ground almonds as well. Cut out the dough and place the cut-out cookies on a baking sheet lined with baking paper. Bake the cookies at 130°C for approx. 20 minutes. Once the cookies are ready and cooled, you can coat them with chocolate, if desired. This amount will yield approximately 200 star-shaped cookies (diagonal: 5cm).
