Ingredients for 1 servings:
- 200 g butter, room temperature
- 150 g sugar
- 5 egg yolks
- ½ tsp lemon flavor
- 1 pinch of salt
- 400 g flour
- 300 g jam (forest fruit jam)
- 5 egg whites
- 150 g powdered sugar
- 200 g almonds, ground
- 3 tbsp cocoa powder
Instructions
Working time approx. 40 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 25 minutes; Total time approx. 2 hours 5 minutes
Cream the butter with sugar, egg yolk, and a pinch of salt until fluffy. Mix the lemon flavoring with the flour and knead in. Wrap the dough in cling film and chill for at least one hour. Then roll it out on baking paper the size of a baking sheet and place it on the baking sheet. Roll out even further to the edge if necessary. Spread the jam on top. Beat the egg whites until stiff, fold in the powdered sugar and ground almonds. Spread the foam mixture over the jam. Bake in a preheated oven at 180°C (top/bottom heat) for about 25 minutes. Then, with the baking paper on, transfer it to a board and cut into slices, approximately 2 cm wide and 5 cm long, while still warm. Dust with cocoa powder. Makes about 50 slices.
