Almond-Orange Cake

Ingredients for 1 servings:

  • 1 organic orange(s), approx. 250 g (or 2 small ones)
  • 4 eggs, class M
  • 170 g honey
  • 250 g almonds, ground
  • ½ pack of baking powder
  • some powdered sugar for dusting

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 1 hour 45 minutes

Cover the organic orange with water in a saucepan and simmer for about 1 hour (two smaller oranges will boil for about 35 minutes). Then discard the cooking water and let the orange(s) cool. Cut the cold orange into larger pieces, remove the seeds, and puree the orange pieces with a blender. Beat the eggs and honey with a hand mixer on high speed for about 2 minutes until creamy. Stir in the cold orange mixture, mix the almonds with the baking powder, and mix in. Line a 26/28 cm springform pan with baking paper, pour in the batter, and bake at 180°C for about 30 minutes. Do the toothpick test. Dust the cold cake with powdered sugar.
