Ingredients for 1 servings:

  • 200 g flour
  • 1 tsp, leveled baking powder
  • 50 g almond(s), ground
  • 125 g butter
  • 100 g sugar
  • 1 m.-sized egg(s)
  • e.g. lemon(s), the zest of it
  • 1 egg yolk
  • e.g. lemon juice
  • 100 g almond(s), chopped

Knead the flour with baking powder, almonds, butter, sugar, lemon zest, and egg into a shortcrust pastry. Let it rest in the refrigerator for half an hour, or longer if needed. Roll out the dough and cut it into diamond shapes of any size using a pastry wheel. Preheat the oven to 200 degrees Celsius (top/bottom heat). Lighten the egg yolk slightly with lemon juice and brush it over the diamond shapes, then sprinkle the chopped almonds over the dough. Place the diamond shapes on baking paper on a baking sheet and bake at 200 degrees Celsius (400 degrees Fahrenheit) for about 10 minutes until golden brown. Tip: You can also cut the dough into logs or cut them into any shape using cookie cutters.
