Ingredients for 1 servings:
- 500 g flour
- 1 tsp baking powder
- 250 g butter
- 180 g rock sugar
- 70 g almond flakes
- 2 eggs
- 1 tbsp milk
- 20 g spice mix (speculoos spice)
- 2 tbsp powdered sugar
- Flour for the work surface

Working time approx. 35 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 35 minutes
Almond cookies
Sift the flour, mix with the baking powder, and knead into a dough with the fat, sugar, almonds, eggs, milk, and spices. Cover and refrigerate for one hour. Preheat the oven to 175°C (350°F). Roll out the dough on a floured surface to about 1/2 cm thick and cut out any desired shapes. Bake for about 10-12 minutes. Let cool and dust with powdered sugar. This is the original recipe. I personally always use half of the recipe, and since the dough isn’t sticky at all, I cut out mini stars and then place them on the cookie plate as “fillers.”
