Almond-vanilla cream

Ingredients for 2 servings:

  • 100 g almond(s), blanched and ground
  • 1 tsp lemon juice
  • 2 handfuls of raisins
  • 2 apricots, dried
  • 1 pinch of vanilla powder
  • some almond milk (almond drink) or rice milk

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Combine all ingredients in a blender, adding just a little plant-based milk at first. Blend thoroughly for about 1 minute, gradually adding enough plant-based milk so that the blender can easily grasp everything and doesn’t overflow. Use a pestle if you have one. Divide the cream between two bowls and garnish with fruit, chopped pistachios or almonds, chocolate sprinkles, or other items, as desired. Note: If you make your own almond milk in a blender, you can also use almond pulp for this recipe. The quantities given refer to the dry almonds, i.e., the pulp from 100g of almonds.
