Alphabet soup with fresh vegetables

Ingredients for 4 servings:

  • 100 g soup noodles (alphabet noodles)
  • 2 tsp, heaped vegetable stock powder, instant
  • 1 liter of water, maybe a little more
  • 1 zucchini
  • 2 bell pepper(s), red
  • 2 carrots
  • 1 onion(s)
  • 3 tomatoes
  • possibly herbs, fresh, dried or frozen
  • salt and pepper
  • Paprika powder, sweet, sweet
  • 1 tbsp olive oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Finely chop or slice the onions and then sauté them in a large pot with olive oil. Then deglaze with the water, and while it begins to boil, grate the peeled carrots directly into the pot. Once the water is boiling, stir in the broth. Dice or halve the zucchini and add it to the soup along with the pasta. Simmer for about 10 minutes, then add the chopped tomatoes and bell peppers. Add a little water if needed. Simmer for another 10 minutes and season with spices, salt, and pepper.
