Amaranth and plum casserole

Ingredients for 2 servings:

  • 125 g amaranth
  • 320 g milk
  • 10 g vanilla sugar
  • 1 egg yolk
  • 125 g low-fat curd cheese
  • 1 pinch of cinnamon or more if desired
  • 50 g sugar
  • 2 tbsp oat bran or whole wheat breadcrumbs
  • 3 tbsp almonds, roasted
  • 12 large plums

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Let the amaranth soak with the milk and vanilla sugar for 45 minutes (at a low temperature). Beat the egg yolks until frothy. Stir in the quark and sugar, along with the whole-wheat breadcrumbs/oat bran. Pit the plums. Place the plums in the baking dish and pour the mixture on top. Finally, scatter the flaked almonds on top and bake in the oven at 180°C for 20-30 minutes. The baking time may vary for larger portions or taller dishes. Serve warm, perhaps with vanilla sauce.
