Ingredients for 3 servings:
- 250 g rice, cooked
- 2 eggs, separated
- 2 tbsp margarine
- 2 tbsp sugar
- 1 packet of vanilla sugar
- 2 apples, diced
- 2 tbsp curd
- ½ lemon(s), juice to taste
- Fat for the mold
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Beat the margarine, sugar, and egg yolk until fluffy. Add the vanilla sugar, quark, and the juice of half a lemon (or less to taste). Mix well again. Then mix the cooked rice and diced apples with the quark mixture. Finally, beat the egg whites until stiff peaks form and fold in. Pour the mixture into a greased casserole dish. Bake in a preheated oven at 180°C (convection oven) for about 30-40 minutes. The casserole should be golden brown. We always serve it with vanilla sauce. I usually use the one that you mix without cooking. Note: If you don’t like quark, you can easily omit it, or if you don’t have any on hand – it tastes great without it. This recipe is a great way to use up leftover rice from the day before.
