Ingredients for 1 servings:
- 3 jars of morello cherries, each 720 g filling weight
- 100 g cherry juice
- 500 g sugar
- 120 g Amaretto
- 1 lemon(s), the juice
- 2 vanilla pods, including the pulp
- ½ bottle of bitter almond flavor
Instructions

Pour the cherries into a sieve and drain well, reserving 100g of juice. Divide the cherries among jars. Bring the cherry juice to a boil with the sugar, Amaretto, lemon juice, bitter almond flavoring, and vanilla pulp. Pour over the cherries in the jars until they are covered. Top up with a little more cherry juice if necessary. Cover and preserve in a pressure cooker for 15 minutes. Remove from the jar, let cool, and let stand for a week (or a little longer) to infuse. Delicious as a dessert with vanilla ice cream or vanilla cream.
