Ingredients for 8 servings:
- 4 egg yolks
- 100 g sugar
- 230 g sour cherries
- 100 g dark chocolate
- 100 g walnuts
- 600 g cream
Instructions
Working time approx. 10 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 10 minutes
Beat the egg yolks with the sugar until frothy. Chop the amaretto cherries, dark chocolate, and walnuts, then mix them into the egg yolk mixture. Whip the cream and fold it in. Line an oblong cake tin with cling film and pour in the mixture. Choose a length of film that allows the parfait to be covered afterward. Freeze. The parfait can be served with warm, thickened sour cherries or cherry whiskey.
