Amaretto ice cream from the ice cream maker

Ingredients for 4 servings:

  • 250 ml milk
  • 300 ml cream
  • 1 vanilla pod(s)
  • 1 pinch of salt
  • 3 egg yolks
  • 4 tbsp sugar
  • 80 g amaretti biscuits
  • 3 tbsp Amaretto
  • some amaretti for garnishing

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes

Combine the milk and cream in a saucepan. Split the vanilla pod, scrape out the seeds, and add them, along with the pod, to the milk and cream. Add the salt. Heat everything until just below boiling point. Mix the egg yolks and sugar in a bowl. Slowly pour in the hot milk and cream and mix well. Remove the vanilla pod. Chill the ice cream mixture. Pour the cold ice cream mixture into the ice cream maker and, just before freezing, add the crushed amaretti biscuits and the amaretto. Serve on plates and garnish with more amaretti biscuits.
