American blueberry pancakes

Ingredients for 4 servings:

  • 3 eggs
  • 200 ml milk
  • 250 g sour milk, yogurt or similar
  • 50 ml oil
  • 3 tbsp lemon juice
  • 1 lemon(s), peel thereof, organic
  • 500 g flour
  • 3 tbsp sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 300 g wild blueberries, can be more if you like

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 35 minutes

Whisk the eggs with the liquid and the grated lemon zest. Mix the dry ingredients separately and add them to the liquid. Stir everything quickly. Add the berries and fold them in. Use melted butter or oil for frying. Heat the pancake pan to medium heat. Drop a heaped tablespoon of batter into each well and cook for 2-3 minutes on each side. Serve as fresh as possible, topped with maple syrup and extra berries.
