Cocoa-cherry pancakes without sugar

Ingredients for 2 servings:

  • 2 bananas, ripe
  • 2 eggs
  • 4 tbsp, heaped flour
  • ½ tsp, leveled baking soda
  • 1 handful of cherries, fresh, ripe
  • possibly yogurt, Greek
  • possibly apple syrup
  • possibly cherry(s), for decoration
  • some butter for frying
  • 1 tsp, levelled cocoa powder

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

sweetened with bananas, suitable for Baby Led Weaning (BLW)

Peel the bananas and mash them finely in a deep dish, or puree everything in a bowl. Add the eggs, cocoa, flour, and baking soda and mix. Pit and chop the cherries. Gently heat a nonstick pan. Do not overheat. Add butter to the pan and spoon the batter into the pan, then top with cherries. Fry on both sides over low to medium heat. Serve with a dollop of yogurt, a drizzle of apple syrup, and fresh cherries, if desired. This mixture makes 6 medium-sized pancakes.
