Ingredients for 1 servings:

  • ½ lemon(s), untreated (organic)
  • 2 tsp anise
  • 175 g butter, soft
  • 100 g powdered sugar
  • 1 egg(s)
  • 250 g flour
  • Powdered sugar for dusting

Preheat the oven to 180°C (350°F), fan oven 160°C (320°F), gas mark 3. Rinse the lemon with hot water, pat dry, and finely grate the zest. Finely crush the aniseed in a mortar and pestle. Cream the butter and icing sugar with a hand mixer until fluffy. Beat in the egg. Gradually add the flour, grated lemon zest, and crushed aniseed and mix everything into a smooth batter. Fill the soft batter into a piping bag fitted with a medium-sized star nozzle or into a pastry bag. Pipe the batter in dense waves onto baking sheets lined with baking paper. Bake the cookies in the oven for about 12 minutes until golden brown. Once cooled, dust with icing sugar.
