Ingredients for 4 servings:

  • 3 egg yolks
  • 1 vanilla pod(s)
  • 100 g sugar
  • 250 ml milk
  • 250 ml cream

Instructions

Working time approx. 20 minutes; Rest time approx. 6 hours; Cooking/baking time approx. 20 minutes; Total time approx. 6 hours 40 minutes

Split the vanilla pod lengthwise and scrape out the seeds with the tip of a knife. Separate the eggs and whisk the egg yolks, sugar, and vanilla seeds in a bowl until smooth. Heat the milk with the vanilla pod in a saucepan. Gradually stir the milk into the egg and sugar mixture. Simmer the mixture in the saucepan, stirring constantly, until it begins to become creamier and firmer. Remove the pan from the heat, remove the vanilla pod, and let everything cool, ideally in the refrigerator for 6-8 hours. Whip the cream until stiff peaks, fold it into the mixture, and then transfer everything to the ice cream maker. The egg whites make a great meringue.
