Appenzeller Cake

Ingredients for 8 servings:

  • 100 g butter, room temperature
  • 3 eggs
  • 1 dl buttermilk or milk
  • 200 g cheese (Appenzeller), grated
  • 250 g diced ham
  • 1 bunch parsley, chopped
  • 1 bunch chives, chopped
  • 250 g flour
  • 1 packet of baking powder
  • ½ tsp salt
  • pepper
  • Paprika powder
  • nutmeg
  • Butter for the mold

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 20 minutes

Grease a 30cm cake tin with butter or line with baking paper. Preheat the oven to 180°C. Cream the butter until fluffy, then add the eggs one at a time. Add the buttermilk or milk, salt, spices, herbs, ham, and cheese, and mix well. Combine the flour and baking powder and fold well into the batter. Pour the mixture into the prepared cake tin and bake in the center of the oven for about 50 minutes. Let cool in the tin. For a meat-free version, replace the ham with sun-dried tomatoes. The Appenzeller Cake tastes wonderful warm or lukewarm with salad, or cut into cubes for an aperitif.
