Apple and almond cake

Ingredients for 1 servings:

  • 225 g flour
  • 80 g sugar
  • 1 packet of vanilla sugar
  • 1 egg(s)
  • 1 tsp baking powder
  • 100 g butter
  • 120 g almond(s), ground
  • 1 egg(s)
  • 2 tbsp Amaretto
  • 60 g sugar
  • ½ tsp cinnamon
  • 3 apples
  • 500 g sour cream
  • 100 g whipped cream
  • 2 eggs
  • 1 pack of pudding powder, vanilla
  • 1 packet of vanilla sugar
  • 90 g sugar

Working time approx. 30 minutes; Total time approx. 30 minutes

For the dough, knead all ingredients into a smooth dough. Grease a 26cm springform pan, pour the dough into it, spread it out, and raise the edges to a height of 3cm. Refrigerate until ready to use. Mix the almonds with the sugar and cinnamon, add the Amaretto and egg, and mix everything until smooth. Spread the mixture over the dough. Peel, quarter, and core the apples, and make several slits along the rounded edges. Press the apples, rounded side up, onto the almond mixture. Mix the sour cream with the eggs, sugar, vanilla sugar, cream, and vanilla pudding and pour over the apples. Bake in a preheated oven at 180°C for 40-45 minutes (top/bottom heat). Allow to cool, remove from the pan, and leave to cool overnight.
