Apple and blackberry wholemeal cake

Ingredients for 1 servings:

  • 350 g apples
  • 3 tbsp lemon juice
  • 300 g wheat flour (wholemeal)
  • 3 tsp cream of tartar baking powder
  • 1 tsp cinnamon
  • 160 g brown sugar
  • 1 egg(s)
  • 200 g low-fat cream cheese
  • 200 g blackberries
  • some fat, for the mold
  • 2 tbsp sugar, brown for the mold

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes

Peel and core the apples, then dice them. Drizzle with lemon juice and simmer in a saucepan for about 10 minutes. Combine the flour with baking powder, cinnamon, and sugar. Combine the egg and cream cheese, fold in the apples, and add to the flour mixture. Blend until smooth. Sort the blackberries and fold into the batter. Preheat oven to 170°C (350°F). Grease a loaf pan and sprinkle with 2 tablespoons of brown sugar. Pour the batter into the pan and bake for about 45 minutes (test with a toothpick). If you don’t like the whole-grain texture, you can substitute some of the flour with plain flour.
