Apple bread with dried cranberries

Ingredients for 1 servings:

  • 375 g apples
  • 100 g brown sugar (raw cane sugar)
  • 75 g cranberries, dried
  • 2 tbsp Calvados
  • 100 g raisins
  • 250 g Flour (wholemeal spelled flour)
  • 2 tsp baking powder
  • 100 g hazelnuts, roasted, whole
  • 1 egg yolk
  • 8 walnuts (halves)
  • 1 tbsp cranberries, dried

Working time approx. 20 minutes; Rest time approx. 5 hours; Total time approx. 5 hours 20 minutes

Core the apples, do not peel them, and grate them coarsely. Place the apple mixture in a bowl with the cane sugar, cranberries, raisins, and Calvados, cover, and let stand for at least 5 hours, or overnight if possible. The next day, mix the flour with the baking powder and fold it into the apple mixture along with the hazelnuts. Form a small loaf of bread, brush it with the egg yolk, and decorate with the remaining cranberries and walnut halves. Bake in a preheated oven at 160°C with fan for about 1 hour. If stored in a cool, dark place, it will keep for at least 4 weeks. The apple bread is also suitable as a healthy snack for school or the office.
