Apple and coconut fritters

Ingredients for 1 servings:

  • 6 eggs
  • 210 g flour
  • 120 g sugar
  • 3 packs of vanilla pudding powder
  • 3 tsp baking powder
  • 1 pack of cream cheese (coconut cream cheese), 175 g
  • 3 apples
  • 150 g coconut flakes
  • oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Beat the eggs with sugar until frothy. Add the cream cheese, baking powder, flour, and pudding mix and stir into a smooth batter. Coarsely grate or chop the apples and fold in with the coconut flakes. Fry the doughnuts in a pan with oil.
