Apple and pear puree with vanilla

Ingredients for 1 servings:

  • 750 g apples and pears, mixed
  • 1 packet of vanilla sugar
  • 42 g sugar substitute (Xucker light)
  • 5 tbsp water
  • 5 drops of vanilla flavor

First, peel, core, and slice the apples and pears. Note: I like to peel them so that no peel remains in the puree when pureed. But if you like, you can leave the peel on. You can also mix sweet and tart apples. In a saucepan, combine the Xucker, water, flavoring, and fruit pieces, cover, and simmer on low heat for about 10-15 minutes until soft. As soon as the fruit becomes pulpy, remove the pan from the heat. Then either puree the fruit with a hand blender and then immediately bottle while hot, or mash it with a potato masher and bottle while hot. This recipe makes enough for 3-4 small, clean, sterile screw-top jars (approx. 230 ml each). Once the puree has cooled, serve with Kaiserschmarren (sweet pancakes), potato pancakes, or other sweet dishes. Tips: Of course, the Xucker can be replaced with regular sugar (approx. 50 g) or honey (approx. 1-2 tbsp). You may just need to adjust the quantity. If you like, you can also use cinnamon instead of vanilla flavor.
