Ingredients for 4 servings:
- 500 g cherries, black
- 4 tbsp flour
- 8 tbsp sugar
- 1 pinch of salt
- 3 eggs
- 2 cups milk
- Butter, for the mold
- Powdered sugar, for dusting

Clafoutis
Wash the cherries, remove the stems, and drain well. Mix the flour, sugar, and salt in a bowl. Separate 1 egg into yolk and egg white, and beat the egg white until stiff peaks form. Mix the remaining eggs and egg yolk with the flour and sugar. Gradually stir in the milk and let the batter stand for a few minutes. Preheat the oven to 200°C (400°F). Grease an ovenproof dish with butter and add the cherries. Fold the meringue into the batter and pour this over the cherries. Bake the casserole in the preheated oven on the second rack from the bottom for about 45 minutes. Serve the cherry casserole hot or cold, as desired. Dust thickly with powdered sugar before serving. TIP: Depending on the season, this casserole can also be made with apricots, peaches, apples, gooseberries, or currants.
