Apple and sweet potato salad

Ingredients for 2 servings:

  • 200 g sweet potatoes
  • 200 g apples
  • 2 sprigs of thyme
  • 3 tbsp oil
  • salt and pepper
  • 30 g pine nuts
  • 1 tbsp honey
  • 2 tbsp balsamic vinegar, white
  • 80 g young leaf spinach

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

Peel the sweet potatoes and apples. Core them. Cut both into wedges and place them on a baking sheet with the thyme. Drizzle with 1 tablespoon of oil. Bake for approximately 15 minutes at 180°C. Sprinkle the pine nuts over the potatoes 2 minutes before the end of the cooking time and continue cooking. Mix together the honey, vinegar, remaining oil, salt, and pepper. Mix the spinach, apples, sweet potatoes, and pine nuts with the dressing.
