Apple cake with lavender icing

Ingredients for 1 servings:

  • 1 pack of puff pastry, fresh from the refrigerated section
  • 5 apples, sour
  • 2 tbsp lemon juice
  • 1 cup crème fraîche
  • 1 egg(s)
  • 2 tbsp sugar
  • 1 packet of vanilla sugar
  • 1 tbsp lavender flowers, fresh or dried
  • 2 tbsp apricot jam or quince jelly

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes

Cut the puff pastry into a square, place on baking paper in a tart pan or on a pizza tray. Peel and slice the apples, and drizzle with lemon juice. Arrange them on the pastry, leaving the edges free. Mix a glaze of crème fraîche, egg, sugar, vanilla sugar, and lavender blossoms and spread it over the apples. Fold the edges of the pastry over the apples. Bake in an oven preheated to 200°C (400°F) on the lowest rack for 10 minutes with bottom heat. Then switch to 180°C (350°F) fan oven and bake for another 20 minutes. Glaze the pastry edges with apricot jam.
