Ingredients for 1 servings:
- 150 g flour
- ½ tsp baking powder
- 60 g sugar
- 1 packet of vanilla sugar
- 100 g butter
- 1 egg yolk
- 1 tbsp milk
- 1 pinch of salt
- 1 apple
- 50 g almonds, chopped
- 40 g ground almonds
- 30 g sugar
- 2 tbsp milk
- 2 tbsp instant coffee powder (cappuccino powder)
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Make a shortcrust pastry from the dough ingredients. Wrap in cling film and let rest in the refrigerator for about 30 minutes. Peel, core, and coarsely grate the apple. In a small saucepan, combine the milk with the cappuccino powder, add the sugar, and bring to a boil briefly. Add the chopped and ground almonds and the grated apple and mix well. Roll out the dough and cut out cookies. Place on a baking sheet and spread a little of the apple mixture on each cookie, but be careful not to overfill, as this will prevent the cookies from becoming soggy. Bake at 170°C for about 10 minutes, until lightly browned. TIP: For a more intense flavor, you can toast the chopped and ground almonds in a pan without oil beforehand.
