Apple-Carrot-Oat Cookies

Ingredients for 1 servings:

  • 2 m.-large apples, preferably very ripe
  • 1 m.-sized carrot(s)
  • 3 tbsp hazelnuts, ground
  • 3 tbsp spelt flour
  • 4 tbsp oat flakes, fine
  • 1 tbsp honey
  • 2 tbsp rapeseed oil or another neutral oil
  • 1 handful of raisins
  • e.g. cinnamon

Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes

Peel the apples and remove the cores. Peel the carrots. Coarsely grate both into a bowl. Sprinkle the ground hazelnuts, oats, and flour, along with the cinnamon, over the apples and carrots and mix thoroughly with a spoon. Stir the raisins, honey, and oil into the mixture. Spoon the finished mixture onto a baking sheet lined with baking paper, gently pressing the mixture between the spoons so that the grated pieces combine with the other ingredients to form a cookie and not too many stick out. Makes about 20 cookies. Bake the cookies on the middle rack at 180°C (fan oven) for about 10 minutes, then reduce the temperature to about 150°C (300°F) and bake for another 30 minutes. Be careful not to overcook the cookies. The insides will remain soft. You can vary the filling with other dried fruits, nuts, or seeds if you like. The cookies have about 191 kcal per 100 g, and about 60 kcal per cookie.
