Apple Cashew Muffins

Ingredients for 1 servings:

  • 3 eggs
  • 150 g butter
  • 100 g cane sugar
  • 1 packet of vanilla sugar
  • 75 g spelt flour
  • 75 g wholemeal spelt flour
  • 1 packet of baking powder
  • 100 g cashew nuts
  • 3 m.-sized apples

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

with spelt flour, for approx. 15 pieces

Briefly roast the cashews in a dry pan. Peel, core, and chop the apples into small pieces. Beat the eggs, butter, sugar, and vanilla sugar until fluffy. Add the flour and baking powder and mix. Then fold in the remaining ingredients. Pour the batter into muffin cups and bake at 180°C (350°F) for about 15-20 minutes. This batch makes about 15 muffins.
