Ingredients for 2 servings:
- 200 g tofu, plain
- 1 kg apples
- 100 g sugar
- 1 pinch of salt
- 1 lemon(s), juice and flesh
- 300 g corn, ground
- 100 g rum, 54%
- Margarine, for greasing
- Sunflower seeds

2 lidded casserole dishes: Shred the tofu with a fork, grate the apples around the cracklings, squeeze the lemon, remove the seeds, and use the meat. Grind the corn, add the rum, and mix everything well. Press into the greased or lined casserole dishes. Sprinkle with sunflower seeds, pressing a little into the batter if desired. Cover. Bake in a cold oven at 130°C (convection oven) for about 70-80 minutes; it should bubble at the bottom. Serve warm or cold. It’s very filling for two people, or even three. My own recipe.
