Ingredients for 4 servings:

  • 1 cup dates, finely chopped
  • 1 ½ cups nuts, ground
  • ½ cup dark chocolate
  • 4 tbsp cream (soy cream)
  • 8 tbsp, levelled cocoa powder – powdered sugar mixture
  • 1 pinch of salt
  • e.g. oil, for the form
  • some flavoring, e.g. rum or vanilla

Working time approx. 10 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 10 minutes

Puree the dates in a blender. This isn’t easy, so to achieve a somewhat homogeneous mixture, add the soy milk/cream a little at a time. Then stir in the nuts (I always use mixed nuts and leave some larger pieces). Grease a shallow dish and place in the refrigerator. Melt the chocolate (over a bain-marie) and mix it with the date-nut mixture. Pour into the dish, smooth it out, and refrigerate for at least 3 hours. Sprinkle with cocoa powder before serving. This recipe is incredibly versatile. You can use all kinds of dried fruit and nuts. It tastes absolutely fantastic if you sprinkle the bottom of the dish with cookie crumbs.
