Apple curry soup

Ingredients for 4 servings:

  • 4 apples, sour, e.g. Boskop
  • 1 onion(s)
  • ½ liter vegetable broth
  • 1 tbsp curry powder (Madras curry)
  • Whipped cream or crème fraîche
  • salt and pepper
  • butter
  • possibly sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Dice the onion and sauté in a little butter. Peel the apples and thinly slice/slice them. Add them to the onions and continue sautéing. Sprinkle with curry powder and then pour in the vegetable stock. Blend everything with a hand blender. Season with salt and pepper, and a little sugar if desired. Serve with crème fraîche or whipped cream. Fresh croutons go very well with this dish.
