Apple Drops (Apple Berliner)

Ingredients for 1 servings:

  • ½ cube of fresh yeast
  • 150 ml milk
  • 100 g butter, soft or liquid, but not hot
  • 2 eggs
  • 350 g flour
  • 100 g sugar
  • 2 pieces of apples
  • Clarified butter, for frying

Instructions

Working time approx. 1 hour; Rest time approx. 1 hour; Total time approx. 2 hours

Crumble the yeast into the milk, then add the butter and 2 eggs. Mix well and let stand for 5 minutes. Add the flour and sugar to the liquid and knead everything into a bubbly dough. If it is too thin or runny, add more flour until it reaches the right consistency. Peel and core the apples, cut them into 1 x 1 cm pieces and knead them into the yeast dough mixture, not too hard, or they will crumble. Let the dough rise as usual; it should at least double in size. Don’t roll it out, but flatten it with your hands to about 2 cm thick and cut out little droplets. Roll in hot clarified butter (please only use clarified butter, NOT deep-frying oil, as this will make it taste bad) and cinnamon sugar.
