a jam with a special taste experience

Rinse the screw-top jars with hot water and set aside. Core the apples (I leave the skin on) and cut into small pieces. Weigh out 1 kg. Bring the apple pieces to a boil with a little water (just enough to cover the bottom of the pot) and simmer until slightly softened. Remove from the heat, add the gelling sugar, and puree with a hand blender. Continue processing the apple puree as directed on the gelling sugar package. Finally, stir in 2 slightly heaped tablespoons of mustard and pour the jam into the prepared screw-top jars. Rotisseur mustard also works very well for flavor.
