Apple-Lime Cake

Ingredients for 1 servings:

  • 225 g flour
  • 25 g cornstarch
  • 1 tsp baking soda
  • 1 pinch of salt
  • 100 g butter
  • 2 limes
  • 1 vanilla pod(s)
  • 3 eggs (size M)
  • 125 g sugar
  • 250 g yogurt
  • 2 apples
  • Fat for the mold

Preheat the oven to 180°C. Grease and set aside a 20 x 20 cm baking dish. Sift flour, cornstarch, baking soda, and salt into a bowl. Melt the butter. Zest the limes and then squeeze out the juice. Halve the vanilla pod and scrape out the seeds. Briefly mix the eggs and sugar together, then add the yogurt, vanilla seeds, lime zest, and lime juice, and finally stir in the melted butter. Peel the apples, remove the cores, and cut the flesh into 1-1.5 cm cubes. Add the wet ingredients to the bowl with the dry ingredients and fold in with a wooden spoon or silicone spatula until no flour is visible. Then fold in the apple pieces. Pour the batter into the baking dish and smooth it down. Bake at 180°C for 30-35 minutes.
