Ingredients for 1 servings:

  • 500 g apples (peeled and weighed)
  • 500 g orange(s) (weighed peeled)
  • 250 g onion(s) (weighed peeled)
  • 30 g ginger (weighed after cleaning)
  • 2 garlic cloves
  • 250 g brown sugar (cane sugar)
  • 250 ml vinegar (white wine vinegar)
  • 1 lemon(s) (untreated)
  • 1 tbsp mustard seeds
  • 1 tsp salt
  • 1 tsp black pepper, freshly ground

Peel the apples, quarter them, and cut them crosswise into thin slices. Weigh out 500g. Peel the oranges with a sharp knife down to the flesh, scoop out the segments, and remove any seeds. Weigh out 500g. Peel the onions, halve them lengthwise, and cut them into thin rings. Weigh out 250g. Peel the ginger, weigh out 30g, and finely dice it or press it through a garlic press. Peel the garlic and press it through a garlic press. Mix the fruit mixture with sugar, vinegar, juice, lemon zest, and spices. Simmer for about 30 minutes. While still boiling hot, fill sterilized twist-off jars (preferably with a jam funnel to keep the edges clean), close the lid, and let cool upside down. Tips: This chutney is perfect for winter—for example, as a last-minute Christmas gift—because the fruit used is now ripe and available in stores.
