Apple pancake waffles with Calvados à la Didi

Ingredients for 5 servings:

  • 3 m.-sized eggs
  • 2 tbsp sugar
  • 1 packet of vanilla sugar
  • ½ pack of baking powder
  • 8 tbsp flour
  • 100 ml milk
  • 1 m.-sized apple
  • 1 lime(s)
  • 4 cl Calvados
  • 5 tsp powdered sugar
  • some sunflower oil for the waffle iron

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 27 minutes

Grate the zest from half a lime and set aside the zest for later use. Squeeze the lime juice into a bowl of water. Peel and quarter the apple, remove the core, and place the pieces in the lime water to prevent them from browning. Separate the eggs. Beat the egg whites until stiff peaks form. Beat the egg yolks with the sugar, vanilla sugar, baking powder, and lime zest until frothy. Add the flour and milk a tablespoon at a time. Grate the apple and add it. Mix everything until a smooth batter forms. Mix in the Calvados and fold in the beaten egg whites. Heat up and grease the waffle iron. Pour a large ladleful of batter into the waffle iron, close the waffle iron, and bake a waffle. Repeat this process until all the batter is used up. Sprinkle the apple pancake waffles with powdered sugar and caramelize the sugar using the gourmet torch. Arrange and serve.
