Apple pancakes with cinnamon sugar

Ingredients for 4 servings:

  • 4 tbsp flour
  • 4 tsp sugar
  • 1 pinch of salt
  • 200 ml milk
  • 4 eggs
  • 4 apples
  • 4 tsp butter
  • 1 tsp cinnamon
  • 1 tbsp powdered sugar

Working time approx. 15 minutes; Total time approx. 15 minutes

Whisk together the flour, sugar, salt, milk, and eggs to form a smooth batter. Let it rest for about 30 minutes. Preheat the oven to 80°C. Wash, quarter, core, and thinly slice the apples. Melt 1 teaspoon of butter in a pan, add a quarter of the apple slices, and pour a quarter of the pancake batter over them. Fry the pancakes on one side until golden brown, turn, and finish cooking. Keep the pancakes warm in the oven. Repeat with the remaining batter and apples and bake three more pancakes. Mix the cinnamon with the powdered sugar. Serve the cinnamon sugar with the pancakes.
