Apple-papaya strudel

Ingredients for 1 servings:

  • 250 g flour
  • 2 eggs
  • 4 tbsp rapeseed oil
  • 1 pinch of salt
  • 5 tbsp sugar
  • 1 tsp ground cinnamon
  • 60 g raisins
  • 2 papayas
  • 1 lemon(s), juice
  • 2 large apples, sour
  • 3 tbsp apricot jam

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Mix 200g flour, 1 egg, 3 tbsp oil, salt, and 4 tbsp lukewarm water. Knead into a smooth dough. Form into a ball, brush with the remaining oil, and chill for 30 minutes. Peel and halve the papayas and apples, remove the seeds, and cores. Finely dice the flesh, let it marinate in the lemon juice for about 10 minutes, then mix with the sugar, cinnamon, and raisins. Preheat the oven to 200°C. Dust a kitchen towel with the remaining flour. Roll out the dough into a very thin rectangle, then spread with the jam. Spread the papaya-apple mixture over 2/3 of the dough, leaving a 3cm border free along the long sides and tuck in. Using the towel, roll the dough up towards the free third. Place the strudel seam-down on a baking tray lined with baking paper, brush with egg yolk and bake in the hot oven for about 40 minutes.
