Apple, pear and celery salad

Ingredients for 2 servings:

  • 1 apple
  • 1 pear(s)
  • 50 g celeriac
  • salt water
  • 35 g mayonnaise
  • 3 tbsp natural yogurt
  • 2 tbsp cream
  • 1 tbsp lemon juice
  • Salt and pepper, black from the mill
  • 20 g walnuts
  • some parsley leaves, fresh

Working time approx. 25 minutes; Cooking/baking time approx. 4 minutes; Total time approx. 29 minutes

Peel and dice the celery, blanch in boiling salted water for 4 minutes, and drain. In a bowl, combine the dressing ingredients, except for the nuts and parsley, and season to taste. Core and finely dice the apple and pear, and immediately toss them into the dressing. Mix in the celery cubes. Fold the roughly chopped nuts and finely chopped parsley into the salad. Arrange the salad on small platters, garnish, and serve.
