Ingredients for 4 servings:

  • 250 g flour
  • 250 ml mineral water
  • 250 ml milk
  • 2 eggs
  • 1 apple
  • 1 pear(s)
  • 1 tsp salt
  • 1 tsp baking powder
  • ½ lemon(s)
  • 1 tsp cinnamon
  • 4 tbsp oat flakes
  • 3 tbsp sugar

Working time approx. 30 minutes; Rest time approx. 20 minutes; Total time approx. 50 minutes

Mix the flour, water, milk, eggs, salt, baking powder, and sugar together to form a liquid mixture, then place it in a mixing bowl and refrigerate for 20 minutes. While the batter is resting, dice the apple and pear (leaf and skin can remain on). Squeeze half a lemon over the cubes to infuse the acid with the freshness of the fruit. Add the cinnamon and oats, mix, and then add the fruit mixture to the batter as soon as it’s out of the fridge. Fry the cakes like pancakes in a pan with a little oil. It’s best to use a large, well-heaped ladle for one cake. Serve with a sprinkle of sugar and cinnamon.
