Apple and carrot pancakes with cottage cheese and nectarine

Ingredients for 1 servings:

  • 150 g apple
  • 150 g carrot(s)
  • 50 g wholemeal spelt flour
  • 2 eggs
  • some cinnamon
  • some oil
  • 1 cup cottage cheese
  • some vanilla
  • some sweetener or honey
  • 1 nectarine(s)

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Finely grate the apple and carrots. Squeeze some of the excess juice and mix well with 50g wholemeal spelt flour, 2 eggs, and a pinch of cinnamon. Then fry in a suitable pan over medium heat with a little oil until browned to your liking. Mix the cottage cheese with a little vanilla extract and sweetener, if desired. Slice the nectarine and decorate, and you’re done.
