Apple pie with pudding and cream cheese

Ingredients for 1 servings:

  • 120 g butter
  • 50 g sugar
  • 1 egg yolk
  • 150 g flour
  • 1 pinch of salt
  • 1 kg apples (Pinova)
  • 2 tbsp lemon juice
  • 1 packet of vanilla pudding powder
  • ½ liter of milk
  • 200 g cream cheese with yogurt
  • 2 tbsp sugar
  • 1 tbsp, leveled cornstarch

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 30 minutes

For the dough, knead the butter, sugar, egg yolks, flour, and salt using the dough hook of a hand mixer. Transfer to a greased 24cm springform pan, pressing the dough up slightly at the edges. Bake in a preheated oven at 200°C (top/bottom heat) on the second rack from the bottom for 10 minutes. Prepare the pudding according to the package instructions and let it cool slightly. Peel, core, quarter, and slice the apples, and drizzle with lemon juice. Top the pre-baked base with the apples. Whisk together the pudding with the cream cheese, cornstarch, and 2 tablespoons of sugar. Pour over the apples, smooth the surface, and bake for another 40 minutes. Let it cool slightly in the pan.
