Apple poppy seed cake

Ingredients for 1 servings:

  • 3 medium-sized apples, sweet, approx. 90 g each
  • 100 g poppy seeds, ground
  • 120 g butter
  • 120 g sugar
  • 2 eggs, size M
  • 150 g flour (cake flour)
  • 10 g baking powder
  • 100 ml milk
  • lemon juice
  • 1 tbsp lemon zest
  • 1 packet of vanilla sugar

Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes

Preheat the oven to 175°C (top/bottom heat). Peel and core the apples, cut them into cubes (5-8 mm), and drizzle with lemon juice. Cream the butter and sugar until creamy. Stir in the eggs and poppy seeds. Mix the baking powder with the flour and stir into the mixture alternately with the milk. Add the lemon zest and vanilla sugar, and finally mix in the diced apples. Line a baking pan with baking paper and spread the batter onto it. Place the pan on a wire rack in the middle of the oven and bake for approx. 45 minutes at 175°C (350°F). The batter is suitable for a baking pan measuring 29 x 21 cm.
