Apple quark cake

Ingredients for 1 servings:

  • 300 g apples, peeled or apricots
  • 500 g low-fat curd cheese
  • 3 eggs
  • 60 g butter or margarine
  • 50 g semolina
  • 35 g vanilla pudding powder or cream flavor pudding powder
  • ½ tsp baking powder
  • 4 drops of lemon flavor or lemon juice and some zest
  • n. B. Sweetener (vanilla sweetener)
  • 1 pinch of salt

Instructions

Working time approx. 35 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 30 minutes

First, separate the eggs into egg whites and yolks. Then, beat the margarine (or butter), lemon flavoring, egg yolks, and sweetener until fluffy. Add the quark, pudding powder, semolina, baking powder, and salt and mix everything until smooth. Dice the apples and beat the egg whites until stiff. Fold both into the batter. Sweeten the mixture to taste, if desired. Pour the batter into a springform pan lined with baking paper (preferably 24 cm in diameter). Preheat the oven to 180°C (top/bottom heat). Bake for approximately 45 minutes; then let the cake rest for about 10 minutes. Place the baking pan on the middle rack of the oven.
